Pancakes:
1 egg, beaten
2 tablespoons. oil
1 cup water
½ teaspoon. lemon juice
1½ cups Pancake and Waffle Mix
Mix all ingredients with a wire whisk until smooth. Pour onto hot griddle and cook until golden brown, flipping once.
Top with butter and maple syrup.
