These soft chewy Oatmeal cookies have a hint of cinnamon and are irresistibly delicious.
Oatmeal Chocolate Chip Cookies
Ingredients:
⅔ c. all purpose flour
½ tsp. baking soda
½ tsp. ground cinnamon
¼ tsp.salt
⅓ c. packed brown sugar
⅓ c. granulated sugar
¾ c. semi-sweet chocolate chips or butterscotch chips
1 ½ c. quick rolled oats
½ c. chopped nuts (optional)
½ c. softened butter
1 large egg
½ tsp. vanilla extract
Preheat oven to 375° F
Combine flour, baking soda, cinnamon, and salt in small bowl.
Beat butter or margarine, egg, and vanilla in larger mixing bowl until blended.
Add flour mixture and oats. Mix well, breaking up any clumps. Stir in chocolate chips and chopped nuts if desired. Drop by rounded tablespoon onto an ungreased cookie sheet. Bake in preheated oven for 8-10 minutes, Remove from oven and place cookies on wire racks to cool. Makes about 2 dozen cookies
