  5. Prepare the Icing: While the bars cool, beat the cream cheese and butter together until smooth. Add the powdered sugar, milk and vanilla extract, mixing until creamy.
  6. Frost & Serve: Once the bars have completely cooled, spread the cream cheese icing evenly over the top. Slice into squares and enjoy! Makes 48 squares

  • 2 c. all purpose flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 ½ tsp. cinnamon
  • 1 tsp. nutmeg
  • ¼ tsp. ground cloves
  • ½ tsp. salt
  • 1 c. oil
  • 2 c. pumpkin puree or 1 15-16 oz. can
  • 4 eggs
  • ½ c. chopped nuts optional
  • ½ c. raisins optional

Cream cheese icing

  • 3 c. powdered sugar
  • ½ c. butter softened at room temperature (do not use margarine)
  • 8 oz. cream cheese softened at room temperature
  • 1 ½ Tbsp. milk
  • 1 ½ tsp. vanilla

Instructions
 

Bars

  • Preheat oven to 350 °.
  • Grease 15″x10″x1″ pan, or use cooking spray.
  • In large bowl blend all bar ingredients at low speed until moistened. Scrape sides of bowl.
  • Beat an additional 2 minutes at medium speed. Pour into prepared pan.
  • Bake at 350 ° for 25 to 30 minutes or until toothpick inserted in center comes out clean.
  • Cool completely before frosting.

Icing

  • Beat butter and cream cheese together.
  • Add milk and vanilla and beat well.
  • Gradually mix in powdered sugar and beat until smooth and creamy.
  • Spread over cooled bars. Yield 48 bars.
