Pumpkin Bars

These pumpkin bars are perfectly moist and spiced, bursting with warm autumn flavors in every bite. Topped with a rich, velvety cream cheese icing, they strike the ideal balance between sweet and tangy, making them an irresistible treat for any occasion.

- 2 c. all purpose flour
- 2 c. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 ½ tsp. cinnamon
- 1 tsp. nutmeg
- ¼ tsp. ground cloves
- ½ tsp. salt
- 1 c. oil
- 2 c. pumpkin puree or 1 15-16 oz. can
- 4 eggs
- ½ c. chopped nuts optional
- ½ c. raisins optional
Cream cheese icing
- 3 c. powdered sugar
- ½ c. butter softened at room temperature (do not use margarine)
- 8 oz. cream cheese softened at room temperature
- 1 ½ Tbsp. milk
- 1 ½ tsp. vanilla

Preheat oven to 350 °.
Grease 15"x10"x1" pan, or use cooking spray.
In large bowl blend all bar ingredients at low speed until moistened. Scrape sides of bowl.
Beat an additional 2 minutes at medium speed. Pour into prepared pan.
Bake at 350 ° for 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool completely before frosting.
Icing
Beat butter and cream cheese together.
Add milk and vanilla and beat well.
Gradually mix in powdered sugar and beat until smooth and creamy.
Spread over cooled bars. Yield 48 bars.
